As spring approaches and everyone gets eager to get out and see some shows,
get yourself ready by making some great food. These recipes are not that difficult
and are guaranteed to be delicious. Many are staples in the lot, but not common in
cookbooks. Enjoy the day and Enjoy the food!
Easy Cheesy Baked Burritos

1 Can Refried Beans
8 Whole Wheat Tortilla Shells
1 Cup Organic Steamed Rice
1 Medium Sized White Onion (red will work to!)
¼ Cup Red Pepper and Green Pepper
Taco Sauce *if you don’t have that then use (a few squirts of Tabasco sauce, a few shakes of chili powder and a little bit of water)
1 ½ cups of shredded cheese (tofu cheese will too!)
Salt
Pepper
Lemon
Sour Cream (tofu sour cream will work too!)
Guacamole
The first step is to cook the rice, if you don’t have a rice cooker,
just boil 1-¼ cups of water for every cup of rice you are cooking. Add the rice
to the boiling water and let cook, stirring regularly until rice is cooked. If you
do have a rice cooker, just follow the directions they gave you.
Grab yourself a large mixing bowl
Next, chop up the onion and pepper....and add in the bowl.
Open the can of refried beans and add that to the vegetables in the bowl.
Using a spoon, slowly add the rice to the beans/vegetables and mix.
Pour in the Taco Sauce or Hot sauce mixture and stir again, use as much hot stuff
as you like, the best bet is to keep testing to ensure best results.
Add salt and pepper to taste and any other herbs or spices that you enjoy.
Grab a baking sheet and lay out a tortilla...
Take a spoon full of the mix, place on the tortilla, add some of the shredded cheese,
a little more hot sauce and roll it up.
Repeat that last process until all the mix is gone (I usually get about 6-8)
Once all are rolled up, sprinkle shredded cheese over and bake at 425 for about 5-10
minutes (until the cheese is melted)
You can serve these with sour cream or guacamole.
Estimated time: 10 minutes to cut and mix everything
20 - 30 minutes to cook the rice
5-10 minutes for baking.
Serves 3 - 4 people.
